A small group of people including the NESFAS staff and a few Board Members including Ms Patricia Mukhim, Editor, The Shillong Times, Bah Priak, Secretary Khatarshnong Socio- Organization, Meghalaya and Mr Carl Rangad former Director – Horticulture, Department of Agriculture, Government of Meghalaya and NESFAS got together on the 17th of November for a eat in and sampling of food prepared by the NESFAS Flavour Development Department to keep the Terra Madre Day.
An interesting banquet featuring local ingredients cooked in innovative styles was served on the day. The menu featured dishes including a citrus salad featuring the Khasi Mandarin, carrot rice, spicy sweet potatoes, tangerine chicken and orange millet halwa. These recipes were an outcome of innovative experimental cooking that the Department of Flavour Development has been occupied for a couple of months now. At the heart of the endeavour is the wish to present local ingredients in more attractive avatars.
